An easy to make peanut sauce that goes great with some rice and shallow fried chicken. This recipe is trying to replicate the taste of the best peanut sauce I've ever had, that of a local chinese restaurant that sadly no longer exists.
Ingredients (one batch - estimated cook time 15 minutes)
- 800 millilitres coconut milk
- 350 grams peanut butter
- 2 teaspoons sambal oelek
- 5 teaspoons fish sauce
- 5 teaspoons kecap manis (sweet soy sauce)
- OPTIONAL - 1 onion
- OPTIONAL - butter
Cooking
If you decided to use an onion then read this paragraph, otherwise jump to the next. Chop the onion into tiny pieces, then pour it into a pot alongside the butter. Stir around to cover the onion in the butter, then sautée the onion until sweet.
Pour the coconut milk in the pot together with the peanut butter. Mix them together on the stove on low heat while adding the sambal oelek, fish sauce, and kecup manis. Keep an eye on the sauce so it doesn't break and add more of either sambal oelek, fish sauce, or kecap manis as needed. Remove from stove once it's warm enough. Enjoy!
This recipe is a good starting point for making your own peanut sauce. I will admit it's not quite yet where I personally want it to be, but it is good enough to be enjoyed in its own right, so I hope you enjoy it.
